‘Vanlife’ Vegan Pancakes with Coconut and Maca
It’s dawn, and you’ve woken up in the van, feeling cold, stiff and cranky. You don’t feel human.
You question what the hell you’re doing here. We’ve all had these mornings right?
Times like these call for an epic breakfast. A breakfast that says “You’re fine, this is good, you’re on the right track. Living in a van is awesome.” A breakfast that gives you a big warm cuddle and sends you on your way to a fantastic day. A breakfast that puts a happy smile back on your face. And if you ask me, there’s only one thing that ticks all these boxes: pancakes.
In a van? I hear you ask. Hell yes! In just 15 minutes, using only 6 ingredients from our essential Vegan Van Box, we rustled up a breakfast that put us back on the road to happiness. You can make these whether you live, like us, in a van, or on a camping trip (this will DEFINITELY impress your friends, even non-vegans), at home when you need cheering up, or just anytime you fancy pancakes.
And the best bit? They’re healthy, so no guilt-trip!
Traditional pancakes are made with white wheat flour, which, as health-conscious vegans we are eager to move away from. Coconut flour is high in protein, healthy fats and digestible carbohydrates, and is gluten-free, which makes it a tasty and nutritious alternative to refined flour. And its high fibre content keeps you regular, which, let’s face it, is pretty important any time but especially if you’re on the road 🙂 Plus it keeps you feeling satisfied and bursting with energy till lunchtime.
Mrs Bee is currently obsessed with Maca Root powder and adds it to almost everything, from pancakes to muesli to superfood energy shakes and truffles. Maca is loaded with minerals and helps to balance hormones and mood. The taste is like a subtle savoury caramel which works in both sweet and salty dishes.
So, without further ado, here’s the recipe for an energizing, mood enhancing breakfast that takes just 15 minutes to make.
Kamut, Coconut & Maca (makes two pancakes)
A handful of ingredients:
- 2 tbsp coconut flour
- 4 tbsp kamut flour
- ½ tbsp maca powder
- ½ cup almond milk (you can use other dairy-free milk)
- Pinch of Himalayan pink salt (if desired)
- Small dollop of coconut oil to cook
A breeze to make:
- Throw all the ingredients in a bowl.
- Mix together until you get a dough-like consistency.
- Split the mixture in two and form each pancake by hand.
- In a frying pan, heat up a little coconut oil.
- Fry the pancakes for around 2-3 minutes on medium on each side, or until golden brown—they will firm up as they cook, making it super easy to flip them over (no pancakey acrobatics required!).
- Serve with maple syrup and fruit, or whatever you have to hand (nut butters, coconut nectar, date jam…)
Hearty, filling, almost bread-like in consistency (Mr Bee has a bit of a bread obsession at the moment!) these pancakes will make your tummy smile and set you up for the day.
